Georgia Blueberry Salad (Blackberry Jello)

Georgia Blueberry Salad

  • 2 cups Georgia blueberries
  • 1 (3 oz.) package blackberry gelatin
  • 1/2 cup sugar
  • 1 cup boiling water
  • 3/4 cup water
  • 1 (20 oz.) can crushed pineapple
  • 2 tablespoons corn starch dissolved in
  • 1 cup chopped nuts
  • 2 tablespoons water
  • 1 cup sour cream
  • 1 (3 oz.) package lemon gelatin
  • Lettuce leaves
Directions:Cook water, sugar and Georgia blueberries until blueberries are tender.  Add corn starch mixture and continue stirring until thick.  Set aside to cool.  Dissolve gelatins in boiling water and set aside to cool.  When gelatins cool, add to blueberry mixture.  Then, add pineapple and nuts.  Pour half of the mixture into an 8 x 12-inch pan and chill until firm.  Spread sour cream on top.  Pour remaining Georgia blueberry mixture on top and chill until firm.  Cut into squares and serve on crisp lettuce leaf.
