Baked Georgia Blueberry Pudding with Lemon Sauce

Baked Georgia Blueberry Pudding

  • 2 cups flour
  • 1/2 teaspoon grated lemon peel
  • 1 1/2 cups sugar
  • 3/4 cup butter or margarine, softened
  • 2 tablespoons baking powder
  • 2 eggs
  • 3/4 tablespoon nutmeg
  • 3/4 cup milk
  • 1/2 teaspoon salt
  • 2 cups Georgia blueberries
Directions:Mix together in large bowl flour, sugar, baking powder, nutmeg, salt and lemon peel.  Cut in butter with pastry blender until size of small peas.  Add eggs and milk and mix at low speed of mixer for 3 minutes or until thoroughly blended.  Pour into greased, floured 9 x 9 x 2-inch pan and top with Georgia blueberries.  Bake in 350 degree F oven for 1 hour and 10 minutes or until tester inserted in center comes out clean.  Serve warm with Lemon Sauce.  Makes 9 servings.

Lemon Sauce

  • 1/2 cup sugar
  • 1 egg yolk
  • 1 tablespoon corn starch
  • 3 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1 teaspoon lemon peel
  • 1/4 cup cold water
  • 2 tablespoons butter or margarine
  • 3/4 cup boiling water
Directions: Combine sugar, corn starch and salt in sauce pan.  Stir in cold water and mix well.  Gradually stir in boiling water; cook and stir over medium heat 10 to 12 minutes or until clear and fairly thick.  Blend egg yolk with lemon juice and gradually stir into sauce.  Stir in lemon peel and butter.  Makes 1 1/4 cup.
