Pork Tenderloin with Apple-Blueberry Sauce

This easy, quick meal is great for a weeknight dinner for the family.  With an elegant appearance, this is also a great dish to serve company. Although it is easy to prepare, pork tenderloin can easily serve a larger group of people.  If you really want it to be company-worthy, go the extra mile and caramelize some onions to place over the top of the sliced pork.

Ingredients:
  • 1 pork tenderloin
  • 1 cup Georgia blueberries
  • ¼ cup apple juice
  • 1 tablespoon cornstarch
  • 1 onion, sliced (optional)
Directions:

Preheat oven to 400 degrees.  Place pork tenderloin in a roasting pan and season with about ¼ tsp of salt. Roast for 20-25 minutes per pound.

Meanwhile, when pork is about 5 to 10 minutes from being done, place Georgia blueberries and apple juice in a saucepan and heat to a boil.   Mix cornstarch with a little cool water and add to the sauce to thicken.

For onions: (*optional) cook the onions in a little olive oil in a heavy bottomed skillet until caramelized.

Serve sauce alongside or over the top of the sliced pork.

*Optional – serve caramelized onions on the top of the dish.  This takes the dish from simple weeknight dinner to company worthy!
