Million Dollar Georgia Blueberry Cake

  • 1 box butter cake mix
  • 1 large can crushed pineapple
  • 2 cups sugar
  • 1 rounded tablespoon cornstarch
  • 1 (3 oz.) package cream cheese (room temperature)
  • 1 (3 oz.) package banana cream instant pudding mix
  • 2 cups milk
  • 3 large bananas
  • 1 1/2 cups Georgia Blueberries marinated in 1/4 cup honey, drained
  • 1 (6 oz.) package coconut
  • 1 large container prepared whipped topping
Directions:Set oven temperature according to instructions on cake box.  Mix cake according to directions.  Bake in 3 layers until done.  Cool.

While cake is baking, cook pineapple, sugar and corn starch until thick, then let cool.  Combine cream cheese, pudding and milk; stir until mixture is thick and smooth.

After cake has cooled, place one cake layer on cake plate.  Spread a light layer of pineapple mixture and then a layer of the cream cheese mixture.  Slice 1 banana and spread over cake.  Sprinkle 1/2 cup of drained Georgia blueberries and then 1/4 cup of coconut. Cover with a thin layer of whipped topping.  Place next cake layer on the whipped topping and repeat sequence on last two layers.  Then spread whipped topping over the top and sides of cake.  Decorate with Georgia blueberries.  Refrigerate cake
