Georgia Blueberry Supreme Salad

Step 1

Ingredients:
  • 3 tablespoons corn starch
  • 1/8 cup water
  • 2 cups Georgia blueberries
  • 2 small boxes black raspberry gelatin
  • 2 cups boiling water
  • 1 1/2 cups cold water
  • 1 large can crushed pineapple, drained
Directions:  Mix corn starch, 1/8 cup of water and sugar until very thick.  Add Georgia blueberries; cool completely.  Mix gelatin and boiling water; bring to boil again.  Add 1 1/2 cups cold water.  Fold in Georgia blueberries and pineapple.  Pour into a long greased glass dish and chill until firm.

Step 2

Ingredients:
  • 1 (8 oz.) carton prepared whipped topping
  • 1 (8 oz.) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup 10X sugar
Directions:  Mix and spread over gelatin mixture.

Step 3

Ingredients:
  • 1 cup pineapple juice
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 1 tablespoon lemon juice
  • 1 tablespoon plain flour
Directions:  Mix thoroughly and cook over low heat until thick.  Chill and spread over topping.  Garnish with nuts.
