Georgia Blueberry Punch Bowl Cake

Ingredients:
  • 1/2 cup butter
  • 1/4 teaspoon baking powder
  • 1/2 cup shortening
  • 1/4 teaspoon baking soda
  • 3 cups sugar
  • 1 (6 oz.) package coconut
  • 6 eggs
  • 1 teaspoon vanilla
  • 3 cups all-purpose flour
  • 1 large jar strawberry jam
  • Prepared whipped topping
Directions:Cream butter, shortening; add sugar, beat until well mixed.  Add eggs, one a time.  Add flour, baking powder and soda to creamed mixture.  Add coconut and flavoring.  Bake in prepared tube pan for 1 hour and 15 minutes in 350 degree F oven.  Cool cake completely.

Georgia Blueberry Mixture

Ingredients:
  • 1/4 cup water
  • 1 tablespoon red food coloring
  • 2 cups sugar
  • 3 tablespoons cornstarch
  • 2 cups Georgia Blueberries
Directions:Cook water and sugar until sugar is melted; add blueberries and food color.  Cook until blueberries are tender.  Thicken with cornstarch paste.  Cool.

Pudding Mixture

Ingredients:
  • 1 (3 oz.) package vanilla instant pudding
  • 1 (3 oz.) package banana instant pudding
  • 1 cup evaporated milk
  • 2 cups milk
Directions:

Mix puddings together in mixing bowl.  Add both kinds of milk; beat slowly until thick.
