Georgia Blueberry Peach Flan

Crust

Ingredients:
  • 1/4 cup granulated sugar
  • 1/4 cup confectioners' sugar
  • 1/4 cup margarine, melted
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup plus 1 tablespoon all-purpose flour
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon vanilla
Directions:Mix ingredients together until well blended.  Grease a 12-inch pizza pan.  Put dough in pan; flatten with hands, dusting with flour, if necessary.  Bake at 350 degrees F for 10-12 minutes or until crust is golden brown.  Cool.

Cream Cheese Filling

Ingredients:
  • 1 (8 oz.) package cream cheese
  • 1/3 cup sugar
  • 1 teaspoon almond extract
Directions:Cream ingredients together.  Spread on crust. 

Fruit Layer

Ingredients:
  • 3 peaches, peeled and sliced thin
  • 1 tablespoon sugar
  • 1 tablespoon Fruit Fresh
  • 3 cups fresh Georgia blueberries
Directions:Sprinkle Fruit Fresh and sugar over the peaches.  Spread peaches and Georgia blueberries in a decorative pattern over the Cream Cheese Filling.  Regrigerate.

Citrus Layer

Ingredients:
  • 1 cup peach nectar
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon corn starch
Directions:Combine peach nectar, sugar, lemon juice and corn starch in sauce pan; boil 1 minute.  Cool. Spread over Fruit Layer.  Refrigerate until serving time.
