Georgia Blueberry Citrus Cake

  • 1 package lemon cake mix
  • 3 eggs
  • 1/2 cup orange juice
  • 1 1/2 cups fresh or frozen Georgia Blueberries
  • 1/2 cup water
  • 1/3 cup cooking oil
Directions:Grease and lightly flour three 8-inch baking pans; set aside.  In a large mixing bowl, combine cake mix, orange juice, water, oil and eggs.  Beat on low speed for 30 seconds.  Increase speed to medium; beat for 2 minutes.  With a wooden spoon, gently fold in Georgia blueberries.  Pour into prepared pans.  Bake 35 to 40 minutes or until brown.  Cool layers in pans on wire racks for 10 minutes.  Remove layers from pans and cool thoroughly.  Slice each layer with a serrated knife to make 6 layers.

Citrus Frosting

  • 8 ounces cream cheese, softened
  • 1/2 stick butter, softened
  • 3 cups lemon confectioners' sugar
  • 16 oz. carton prepared whipped topping
Directions:In a large bowl, beat together softened cream cheese and softened butter until fluffy.  Add powdered sugar, mix well.  Add whipped topping and mix well.  Frost cake and decorate with Lemon Glaze.

Lemon Glaze

  • 1 cup lemon flavored confectioners' sugar
  • 2 tablespoons orange juice
Directions:Mix until well blended.  Drizzle over cake.
