Georgia Blueberry Cheesecake

Crust

Ingredients:
  • 1 cup Graham cracker crumbs
  • 3/4 stick butter
  • 1 1/4 cups sugar
Directions: Mix Graham cracker crumbs, butter and 1/4 cup sugar.  Press in bottom of spring-form pan.

Georgia Blueberry Cheesecake

Ingredients:
  • 3 (8 oz.) packages cream cheese
  • 3 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup sour cream
Directions:Beat cream cheese until fluffy.  Add remaining sugar and the vanilla, mixing well.  Beat eggs in separate bowl; add one at the time to the cream cheese.  Mix thoroughly with mixer.  Add sour cream last and mix well.  Spread this over crust.  Bake at 350 degrees F for 1 hour.  Cool, top with blueberry topping.

Topping

Ingredients:
  • 2 cups Georgia Blueberries
  • 1 cup sugar
  • 3/4 cup water
  • 3 tablespoons cornstarch combined in 1/4 cup water
Directions:Cook Georgia blueberries, sugar and water slowly over low heat.  Mix cornstarch and water.  Add to Georgia blueberries and cook until thickened, stirring constantly.  Cool.  Spread over cheesecake.
