Fruit Salad with Tangy Fruit Dressing

Fruit Salad

  • 2 packages whipped topping, prepared
  • 1 (3 oz.) package grape gelatin
  • 1 can crushed pineapple, drained (Reserve juice from pineapple.)
  • 1 (12 oz.) carton creamed cottage cheese
  • 1/2 cup pecans, chopped
  • 2 cups Georgia blueberries
Directions:Prepare whipped topping; thoroughly blend in dry gelatin.  Add pineapple, cottage cheese and pecans; blend thoroughly.  Fold in Georgia blueberries.  Chill several hours or over night.  Serve with Tangy Fruit Dressing.

Tangy Fruit Dressing

  • 1 egg yolk, beaten
  • 3/4 cup of the reserved pineapple juice
  • 2 tablespoons lemon juice
  • 1/3 cup sugar
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 3/4 teaspoon ginger
  • 1/4 cup salad dressing
  • 1 package prepared whipped topping
Directions:Combine egg yolk, reserved pineapple juice and lemon juice in top of double boiler.  Separately mix sugar, flour, salt and ginger.  Then add in double boiler.  Cook over boiling water, stirring constantly until thick.  Cool.  Blend salad dressing and whipped topping.
