Frozen Georgia Blueberry Fruit Salad

  • 1 (8 oz.) package cream cheese, softened
  • 1 cup fresh Georgia blueberries
  • 1/2 cup mayonnaise
  • 1/2 cup toasted almonds
  • 2 tablespoons confectioners' sugar
  • 1/4 cup maraschino cherries, sliced
  • 1 tablespoon lemon juice
  • 1 cup pineapple chunks
  • 1 cup tiny marshmallows
  • 1 small container whipping cream
  • 1 cup orange sections
  • 2 fresh whole pineapples
  • 1 cup peach slices
  • Lettuce leaves

In a large bowl, beat cream cheese, mayonnaise, confectioners' sugar and lemon juice until smooth.  Stir in marshmallows, orange sections, peach slices, Georgia blueberries, almonds, cherries and pineapple chunks.  Beat whipping cream until stiff and fold into cheese-fruit mixture.  Pour into a shallow dish, 8 x 8 x 2-inches.  Cover and freeze for several hours or until firm.

While fruit mixture is freezing, prepare fresh pineapples.  Halve each pineapple lengthwise, cutting through the leafy crown.  Do not remove leafy crown.  Cut out the core, then cut fruit from rind of each half.  (Reserve fruit to be used for another meal.)

Remove the frozen salad from the freezer 15 minutes before serving and let stand at room temperature to soften, then scoop salad into pineapple halves.  Serve on a 18 1/4 x 15 3/4-inch tray.  Line bottom of tray with lettuce leaves.  Place pineapple halves with leafy crowns to the center of tray.  Between each half, garnish with fresh oranges, Georgia blueberries, cherries and pineapple.  Sprinkle sliced almonds over fresh fruit.
