Fresh Georgia Blueberry Roll

  • 3 eggs
  • 1 1/2 cups Georgia Blueberries
  • 1 3/4 cup sugar
  • 1/3 cup water
  • 1 small carton prepared whipped
  • 1 teaspoon vanilla
  • 1 cup self-rising flour
  • 1/4 teaspoon salt
  • Confectioners' sugar topping or whipping cream

Beat eggs until thick and lemon color; gradually beat in 1 cup of sugar.  On low speed, blend in water and vanilla.  Gradually add flour and salt, beating until batter is smooth. Pour into 151/2 x 10 1/2 x 1-inch pan.  Spread to corners.  Bake at 375 degree F for 15 minutes.  While cake is baking, mash blueberries and cover with 3/4 cup sugar.  Set aside.  Loosen cake from edges of pan.  Invert on a towel sprinkled with confectioners' sugar.  While hot, roll cake and towel from narrow end.  Cool.  Unroll cake.  Remove towel.  Spread prepared whipped topping over the cake.  Sprinkle with confectioners' sugar.  Chill cake in aluminum foil.
