Cream Cheese Georgia Blueberry Cups


  • 1 cup all-purpose flour
  • 1/4 cup plus 2 tablespoons margarine, melted
  • 1/2 cup finely chopped pecans
  • 1/4 cup brown sugar (packed)
  • 1/2 teaspoon cinnamon
Directions:Combine all ingredients.  Mix well.  Press on bottom and sides of muffin cups.

Georgia Blueberry Filling

  • 1 cup Georgia blueberries
  • 1 tablespoon corn starch
  • 1/2 cup sugar
  • 1/4 cup water
Directions:Mix ingredients and cook until thick.  Cool.

Cream Cheese Filling

  • 1/4 cup sour cream
  • 2 tablespoons sugar
  • 4 ounces cream cheese

Blend the above ingredients well.

Press crust in muffin pans.  To each cup put about 1 teaspoon Georgia blueberry filling mixture and 1 teaspoon cream cheese mixture.  Cinnamon topping may be used or bake plain and garnish with extra filling.  Bake at 350 degrees F about 30 minutes or until brown.
